I agree. GMs on GP already have too much power in some areas where they really shouldn't have any. Altering character sheets without any player consent requirement is far too much. In fact, I'd prefer if there were player-side checkboxes on what GMs are allowed to do with that player's content. I wouldn't straight up leave a game if a GM edits or rearranges some of my content once, but we will have a serious discussion after that regarding boundaries.
Personally, when I GM, I don't edit characters or posts of my players even if they are obnoxious. I just kick them out of a game and murder their characters if they are also unwilling to listen.

I try to avoid OOC as much as possible in an IC thread. Usually, I am able to weave the mechanics in my IC writing just fine, but sometimes I add clarifications on what specific ability I was describing in case the GM or other players aren't in the mood to solve puzzles (I expect everyone to pay attention, though). In no way would I tolerate someone altering my posts to add OOC. A proper way would be to send me a DM and
ask me to clarify in OOC in a case when it was unclear.

When two players or a player and a GM post at the same time. Still, it's better to discuss it in an OOC thread and rearrange the posts manually by deleting and rewriting them.
